On Monday 26 May world-renowned chef Cheong Liew volunteered his time to give a free masterclass to apprentices from all around South Australia.

The event was held in Hospitality Group Training's new Hospitality Industry Skills Centre and it gave the apprentices the opportunity to learn from one of South Australia's most influential chefs. 

Cheong Liew has been honoured as "one of the ten hottest chefs alive" by the prestigious American Food & Wine Magazine, and inducted into the Hall of Fame in the World Food Media Awards.

He was bestowed the Medal of the Order of Australia in the 1999 Queen's Birthday Honours "for service to the food and restaurant industry through involvement in developing and influencing the style of contemporary Australian cuisine" and has featured on Channel 10's MasterChef series as an honourable guest chef.

The event was free to all apprentices and was attended by apprentices from both metropolitan and rural SA, with some travelling as much as four hours to attend the class.

Meat and Livestock Australia kindly donated some lamb loin for the first dish which was seared Lamb loin with olives, feta and fresh vegetables. For the second dish, Cheong taught one of his favourites, line caught local snapper with leek fondue and shaved cuttlefish.

The apprentices were also treated in a quick course by Reilly's Wines where they discussed how to match the food they had just made with different wines and how they could pick wines to compliment the flavours.
